Portobello Signature Recipes

Roasted garlic

  1. Cut the tops off of the garlic bulbs. A serrated knife works best. Be sure to expose the flesh the individual garlic cloves
  2. In a small mixing bowl, toss the garlic bulbs with the oil and season with salt and pepper
  3. Place the garlic in a 4 inch deep baking dish and pour the remaining olive oil over the garlic.
  4. Add water to cover the bottom of the baking dish.
  5. Cover with foil or lid
  6. Bake in 325 F oven until the garlic is golden brown and soft. About 2 hours, but check from time to time and add water if needed.
  7. Serve with your favorite fresh bread and butter or olive oil.
  8. Roasted garlic may also be used in recipes calling for garlic. The flavor is very mild and sweet.
